Whole wheat bread

Ingredients:

1 TBLSP Dry yeast
1/4 cupWater
2 1/2 cups Hot water
1/2 cup Brown sugar
3 teaspoons Salt
1/4 cup Shortening
3 cups Whole Wheat Flour
4-5 Cups All purpose while flour

Directions:

Soften dry yeast in 1/4 cup of water (NO more than 110 degrees BUT NO less than 100 degrees).

Combine hot water (NO more than 110 degrees), sugar, salt, and shortening in the mixing bowl. Add whole wheat flour and 1 cup white flour. Beat well. Add yeast mixture. Mix well. Add enought remaining flour to make a moderately stiff dough. Dough should pull away from the bowl. Shape dough into a ball a place in a greased bowl. and proof at 80 degrees until double in size. punch down and let proof again. Shape into loaves and proff again until double in size. Bake for about 45 minutes.

Focaccia Bread

I made this FoCaccia bread from scratch and it is delicious............The recipe I got from my school book and cut it in half because it makes 2 loaves and we only wanted one.

Ingredients:

12oz Water (Temperature No MORE then 110 degrees F but No LESS then 100 degrees F.)
9 grams Dry yeast
20oz Bread flour\
1 3/4 tsp Salt
3/4 tsp Sugar
1oz Olive oil


Directions:

Preheat oven to 425 degrees. 

Activate Yeats in the water with sugar. Combine all ingredients in mixing bowl and mix well for 8 minutes on low speed. Proof (let rise) For 1 1/2 hours until double in size at 80 degrees. Punch dough down and roll out place on oiled cookie sheet and poke with fingers.Brush top with olive oil. and top with whatever ingredients you want. Bake in oven with spraying the oven periodically with water for the first 10 minutes to steam. finish baking until golden brown and desired crispness.
