Pulled Pork sandwiches topped with Cole Slaw


Pulled pork-
Heat crock pot on high 
Ingredients:
1- Pork roast ( any cut you prefer)  
2 cups- Apple juice
1/2- Of a beer any kind you choose ( I prefer spotted cow)
6 TBSP- Franks red hot (hot sauce)
6 TBSP- Chili powder
6 TBSP- brown sugar
6 TBSP- salt
6 TBSP- pepper
6 TBSP- garlic powder
6 TBSP- Cumin
Olive oil
In a small bowl mix chili powder, brown sugar, salt, pepper, garlic powder, and cumin. coat roast with olive oil and coat with spice rub. In a frying pan put 2-3 table spoons olive oil and heat. Place roast in pan and cook to form a nice crust. Place roast in crock pot. Add apple juice, beer, and 1/2 cup of water and cook on high for 6 hours. Remove roast and shred in a large bowl add 2-4 cups of the cooking liquid and more of the spice mixture and return to the crock pot and continue to cook on high for 30 to 45 minutes. Serve topped with Cole slaw.



Cole slaw-
Ingredients:
1- Small head of green cabbage
4-Medium carrots
1/3 cup- Apple cider vinegar
1 TBSP- Dijon mustard
2/3 cup- Olive oil
2 TBSP- Sugar
salt and pepper to taste

Directions: 
Chop cabbage and shred carrots with grater. Mix oil, vinegar, sugar, Dijon mustard, salt, and pepper in a large mixing bowl. Toss in cabbage and carrots.Cover and chill for 2-4 hours before serving.
